Chamomile flowers and foliage do in fact smell like apples, and make one of the best teas you can grow. Plants start readily from seed sown in mid spring, and grow quickly to a height of about 15" (taller than you'd think). They flower in early summer, and are soon covered with small, daisy-like flowers. As pretty as they are, they soon fade, and it's time to harvest some tea. Just sheer off the top growth, flowers, leaves, and all, and dry in a paper bag.
If weather conditions are right, it may grow back and give you a second bloom. Where summers are hot, however, you may want to harvest in July and put in something more heat tolerant.
